Join Café Modern for a book signing and lunch with famed cheesemaker Paula Lambert on Wednesday, March 7, in honor of her book, Cheese Glorious Cheese: 75 Tempting Recipes for Cheese Lovers Everywhere. Lambert will sign her cookbook from 10:30––1:30 am. Books are sold in The Modern Shop for $26.96. The three-course lunch ($30; $40 if paired with wine) begins at 11:30 am, prepared directly from the cookbook by Café Modern’s executive chef, Dena Peterson. Twenty-two years ago, Fort Worth native Paula Lambert founded a cheese factory in Dallas called The Mozzarella Company. She recalls, "When I returned home after living in Italy, the thing I missed most was fresh mozzarella, and no one even knew what it was. So I decided to build a cheese factory and make mozzarella in Dallas!" Since its founding, The Mozzarella Company has progressed from making a very small amount of fresh mozzarella to producing a long list of specialty gourmet cheeses.

Today Lambert is known as one of the great American cheesemakers, with more than seventy-five awards to her credit. The tiny factory, located in the shadows of downtown Dallas, sells their award-winning cheeses throughout the United States to restaurants, hotels, and gourmet shops, as well as to individuals. In recent years there has been a renaissance of high-quality cheesemaking across the United States, and pioneer Paula Lambert is partly responsible. With her new book, Lambert celebrates one of America’s most beloved foods by sharing a new collection of delicious, creative and modern recipes.
